Kashmiri Dum Aloo

Dum Aloo Recipe | How to make Dum Aloo

Baby potatoes spiced with ginger, fennel and whole spices and mixed with a yoghurt based sauces. 



This dish is a traditional Kashmiri recipe and is very popular in India. Baby potatoes are first parboiled and then deep fried in oil, preferably mustard oil, and then cooked in a delicious yoghurt based spiced curry bursting with flavors. The recipe is super and easy and I have also added a link to my youtube channel video which shows a step-by-step guide to prepare this delicious recipe. 


Ingredients:

 

Baby potatoes: 20-25 Oil for frying Yoghurt: ½ cup Chili powder: 1tbs Roasted gram flour: 1tbs Salt:As per taste Fennel seeds: 1 tbs Hing: 1 tsp Ginger: 1/2 inch Cilantro: for garnish

Whole spices Green cardamom- 2-3 Black cardamom-1 Cinnamon- 1/2 inch Cloves- 2-3 Cumin- 1 tsp Pepper corn- 1 tsp Red chilli- 1-2


How to make Kashmiri Dum Aloo:

 

1. Boil potatoes until they are half cooked. 2. Poke holes with the tooth pick. 3. In a pot, heat regular oil for deep frying. 4. Add in the half boiled potatoes. 5. Don’t forget to turn in between 6. Fry until crisp 7.Use a kitchen towel to blot excess oil. 8. In a separate bowl, add yoghurt. 9. Add in chili powder and roasted gram flour 10. Add grated ginger 11. And mix well. 12. In the same pan, 13. Leave some oil and save the rest. 14. Add in the whole spices, hing (asafetida) and fennel powder. 15. Now add in the yoghurt mix. 16. And stir. 17. Add in salt. 18. And fried potatoes. 19. Mix it. 20. Cook with the lid on for 3 minutes. 21. Garnish with cilantro and more ginger.
